Friday Night Pizza Thins

Here’s a tasty little thing I pulled together a couple weeks ago for a quick Friday Night Pizza Fix without actually making a pizza or ordering take-out.

No recipe, just a little something for inspiration.

I had some Arnold Sandwich Thins in the cupboard that needed to be used so I pulled those out and gathered up my toppings…

  • Pepperoni
  • Tomato Slices
  • Fresh Mushrooms
  • Yellow Bell Pepper
  • Mozzarella Cheese
  • Olive Oil

I could have toasted the Thins in the oven but I didn’t want to use the oven any more than necessary so I toasted them in the toaster first just until they had a light toast on them.

Then I drizzled them with olive oil and topped them with the toppings.

I baked them in the oven at 350° just until the cheese started to melt.

The thins crisped a little bit more and were the perfect crunchiness without being so hard as to slice the inside of my mouth.  We each ate four of them for dinner and they were so good I made them again for lunch the next day where two thins were plenty for a lunch portion.

If you like thin and crispy crusts give these a try.

If you’ve got kids let them customize their own. Or slice them in triangles and use them as an appetizer.

They’re so easy and make a perfect little vehicle to deliver some pizza-ey goodness! :)

    I actually kind of LOVE making pita/english muffin/bagel thin pizzas. Such comfort food! (And less calories than me scarfing a whole pizza!)

    Really nice idea, wonder how they’d do on the grill. See now I’ve got the grill back I need to get used to using it more.

    These look so good! I love making pita pizzas when I’m short on time.

      I really liked these. They were so fast to put together and I loved how crispy the bread got.
