Avocado Lime Dip…A Zippy Dip!!

Here is another installment of what I did with all those avocado’s (and limes) I bought a while back…

I was looking for a totally different recipe, something I had heard of but couldn’t recall the name.  This popped up in the ol’ googler and I thought it looked terrific and the other recipe was quickly forgotten.

I would do this again.

And again.

And again.

Avocado Lime Dip

from Urban Drivel

  • 1 Haas avocado peeled and pitted
  • 3 tbsp lime juice
  • 3 tbsp sour cream
  • 3 tbsp chopped cilantro
  • 1 tsp ground coriander
  • 1 garlic clove minced
  • 3 tsp canola oil
  • 1/4 tsp salt
  • freshly ground black pepper
  • half of a jalapeno

Dump everything in the food processor and let her rip.

I loved the bright zippiness from the lime and coriander!

  I served it with garlic and herb pita chips alongside our Avocado and White Bean Wraps.

Did I mention I’d make this one again?

And again?

    yes! this is fantastic! Mmmmmm! I’ve been making some “tortilla chips” at home (baked tortillas). This would be the perfect pairing!

      I tried this recipe out a few nights with my family and we LOVED it!! So yummy! It was lick-the-bowl-clean good. Tomorrow I’ll be making it again for a dinner at my mil’s house. I can’t wait to share it. :0)

      You’re always welcome here and feel free to stick you face in to anything I make. When you’re done we’ll just go out back and take a dip in the pool to rinse off! :D

    Did you try freezing the avocados if so how did it work?

      No…I bought two extra then researched it…you need to freeze them as a puree. I still have both of them in the fridge, just haven’t gotten to them. I’m thinking they’re probably over-ripe by now but will check tomorrow.
