Baked Oatmeal

A few weeks ago I commented on RealFoodRealDeals post about granola.  I had been craving oats and took it as a sign I needed to get some in my belly.  It took me another week or so before I finally got around to it but I tried a new recipe and we really liked it.

I like Baked Oatmeal with dried fruit.  The kinds I’ve had in the past were crunchier and could be eaten like a cookie/breakfast bar or crumbled in a bowl and eaten as a cereal with some milk.  This recipe is from Allrecipes and after reading through the reviews I made a few changes based on what the reviewers said.  This particular batch came out dense, moist and chewy.  Because I cut back on the brown sugar significantly, these were *just barely* sweet…and I mean just barely.  Next time I won’t cut it back quite so far because it really needed just a hint more of sweetness.

Baked Oatmeal

  • 2 eggs
  • 1 cup milk
  • 1/2 cup applesauce
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 1/2 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • 1/2 cup brown sugar (next time I’ll use 3/4 cup)
  • 3 cups rolled oats
  • 3/4 cup frozen blueberries, thawed and divided (I’m sure you could use fresh or any variety of dried fruit)

Heat oven to 350°.

Generously butter a 9 x 13 baking dish.  One of the reviewers said she sprinkles half of her blueberries in the bottom of the dish so that’s what I did.  In the end, I don’t think it made any difference.

Because I don’t bake much more these days I measure out all my ingredients just to make sure I don’t over look anything and re-read the recipe to make sure I put things together in proper order.

In a large mixing bowl, whisk the eggs and milk until well combined.

Then add apple sauce, baking powder, salt, cinnamon and vanilla.  Whisk until thoroughly combined then whisk in brown sugar.

 

Fold in the oats.

Then remaining blueberries.

Pour in to baking dish.

Bake 40 minutes (I think mine took 45-50) or until a toothpick inserted in the middle comes out clean.

Let cool then slice in to squares.

    Mmmmm, yes, I’ve been craving oats, too! Ugh, and I love brown sugar and oats!
